Baked Brie with Watermelon Pickles

The idea to serve Baked Brie with Watermelon Pickles popped into my head as I was munching on some plain Watermelon Pickles. It occurred to me that the flavor of these pickles would be a great counterpoint to the richness of melted Brie? Off to the store I went to buy a small round Brie. I diced up some pickles and heated the Brie. Nirvana! The combination of hot melted Brie on a cracker with a dollop of diced watermelon pickle is the perfect bite.  Enjoy!

Baked Brie with Watermelon Pickles

    Ingredients

    • 2 cups watermelon pickles minced
    • whole Brie

      Directions

      1. Preheat toaster oven or range oven to 400°F. Place Brie on lined toaster oven tray or on a lined cookie sheet in oven. Bake for 10 minutes. if the Brie is cold . It will take less time if the Brie is at room temperature. Don't press too hard or the cheese will burst before it hits the serving plate.
      2. Place Baked Brie on serving dish. Spoon the minced pickles on top and serve with crackers.
