Purple, orange and white carrots shredded and tossed with lemon juice and sugar. It doesn’t get simpler that this and it’s fresh, crisp and delicious!

Ingredients

  • 1 pound tri-color carrots peeled and shredded
  • 2 large lemons juiced
  • 2 tablespoons sugar

Equipment

  • electric food processor/spiralizer
  • medium mixing bowl

Directions

  1. Place shredding disc in processor (or use spiralizer) and shred carrots. Pour into mixing bowl. Mix lemon juice and sugar and pour over carrots. Toss well. Serve at room temperature.
