Orange Crisps are delicious light cookies that let you know when they are done by developing a toasty brown rim around the outside. You can turn them into lemon crisps by using lemon zest. Frost them with a confectioner’s sugar glaze if you want a sweeter cookie.

Orange Crisps

Ingredients

  • 1/2 Cup Non-dairy Margarine softened
  • 1/2 Cup Sugar
  • 1 large Egg
  • 1 Teaspoon Vanilla
  • 3/4 Cup Flour
  • 1 small Orange/lemon zested

Equipment

  • Electric Blender
  • Cookie Sheet lined with baking parchment
  • Cooling Rack

Directions

  1. Cream margarine and sugar together until light and fluffy.
  2. Add egg and vanilla and beat until well mixed.
  3. Pour in flour and orange zest and beat on low speed until all ingredients are thoroughly blended.
  4. Preheat oven to: 375Ëš F.
  5. Using two teaspoons, drop batter on to cookie sheet leaving one inch between each one. These cookies will spread. Bake eight to ten minutes or until rims of cookies turn brown. Let cookies cool a few minutes before carefully removing them from cookie sheet and placing on cooling rack. Cool completely before serving or freezing.

      They’ll be wonderful with butter but will spread more and take less time to cook. I haven’t done it. The first time you do it, I would watch them carefully as the rims brown in the oven. Leave at least 1 1/2 inches between each cookie. After you do it once, you’ll know how much they spread.
