Vegetarian Moussaka

I developed a recipe for Vegetarian Moussaka for my daughter; who became vegetarian at 17 years old. I always make a meat Greek Moussaka for Purim; and I wanted her to be able to enjoy some of the same flavors. I make Vegetarian Moussaka with slices of roasted eggplant layered with a creamy vegetarian meat sauce. It is a very satisfying and delicious entrée for vegetarians and meat lovers alike. Serve it with steamed rice and a salad and you have a wonderful meal. Add to that – it freezes and travels well; so make a large pan of Moussaka, cut it into portions and freeze until needed.
