The idea to serve Baked Brie with Watermelon Pickles popped into my head as I was munching on some plain Watermelon Pickles. It occurred to me that the flavor of these pickles would be a great counterpoint to the richness of melted Brie? Off to the store I went to buy a small round Brie. I diced up some pickles and heated the Brie. Nirvana! The combination of hot melted Brie on a cracker with a dollop of diced watermelon pickle is the perfect bite. Enjoy!
Baked Brie with Watermelon Pickles

Ingredients
- 2 cups watermelon pickles minced
- whole Brie

- Preheat toaster oven or range oven to 400°F. Place Brie on lined toaster oven tray or on a lined cookie sheet in oven. Bake for 10 minutes. if the Brie is cold . It will take less time if the Brie is at room temperature. Don't press too hard or the cheese will burst before it hits the serving plate.
- Place Baked Brie on serving dish. Spoon the minced pickles on top and serve with crackers.
