As I was enjoying the taste of my Watermelon Pickles, an idea popped into my head. Wouldn’t the flavor of these pickles be a great counterpoint to the richness of melted Brie? Off to the store I went to buy a small round Brie. I diced up some pickles and heated the Brie. Nirvana! The combination of hot melted Brie on a cracker with a dollop of diced watermelon pickle is the perfect bite. What a great way to demonstrate the blending of two cultures- Watermelon Pickles from the American South and Brie from France. Enjoy!

Baked Brie with Watermelon Pickles

    Ingredients

    • watermelon pickles minced
    • whole Brie

      Directions

      1. Preheat toaster oven or range oven to 400°F. Place Brie on lined toaster oven tray or on a lined cookie sheet in oven. Bake for 10 minutes if the Brie is cold It will take less time if the Brie is at room temperature. Don't press too hard or the cheese will burst before it hits the serving plate.
      2. Place Baked Brie on serving dish. Spoon the minced pickles on top and serve with crackers.
