Carrot Salad, made with purple, orange and white carrots shredded and tossed with lemon juice and sugar; it doesn’t get simpler than that.

- 1 pound tri-color carrots peeled and shredded
- 2 large lemons juiced
- 2 tablespoons sugar
- electric food processor/spiralizer
- medium mixing bowl
- Place shredding disc in processor (or use spiralizer) and shred carrots. Pour into mixing bowl. Mix lemon juice and sugar and pour over carrots. Toss well. Serve at room temperature.
