The idea for Watermelon Pickles Wrapped in Pastrami came about as I was researching Watermelon Pickles. I found many recipes for these pickles wrapped with bacon. The kosher world now has access to beef, turkey and lamb bacon; so you can definitely use one of those. For some reason, as I was eating one of my pickles, my mind jumped to pastrami. I made a bunch of Watermelon Pickles Wrapped in Pastrami for this photo shoot and there were none left after the shot was taken- not even the extras left in the kitchen were safe! Try these. I bet you can’t eat just one!
Watermelon Pickles Wrapped in Pastrami

- watermelon pickles
- pastrami thinly sliced

- Drain as many pickles as you want to wrap. Wrap a slice of pastrami around each pickle. Secure with a toothpick or not. The pastrami will stick to the pickle. Be sure to have napkins on hand!
