Mozzarella and Tomato Skewers are the easiest hors d’oeuvres ever.  You can buy plain Mozzarella and dice that; or you can buy marinated Bocancini and dice those.  Use any type of fun toothpick or skewer you like to make it festive.  Dice your Mozzarella, halve your tomatoes and add blueberries for the Fourth of July!  These Mozzarella and Tomato Skewers served with chilled Rosé or white wine make it a real celebration as do Bloody Marys and beer!

For another quick and easy hors d’oeuvre, make Guacamole and serve with jicama and pepper sticks.

Prep time: 15 minutes

Note:  If you prefer a “do it yourself” activity, you can marinate the mozzarella cubes in advance in your own favorite vinaigrette.

Mozzarella and Tomato skewers

    Ingredients

    • whole milk mozzarella or marinated bocconcini
    • cherry tomatoes
    • fresh blueberries stemmed

    Equipment

    • wooden skewers or toothpicks

    Directions

    1. You can skewer the ingredients however you like; but here's how I do it: Insert the skewer through the center of half a cherry tomato-with the rounded side of the tomato facing the rounded tip of the skewer. Add a cube of mozzarella and then a blueberry. Repeat this process adding the other half of the tomato with the seeds facing the blueberry. Then add the mozzarella and another blueberry. One more time and you're done. Enjoy!
