Mustard Vinaigrette

Mustard Vinaigrette is easy to prepare . I find the simplest way to emulsify the ingredients is by shaking them up together in a jar. You can vary the flavor of this basic Mustard Vinaigrette by adding 1/4 teaspoon dried thyme or 1/2 teaspoon freshly chopped chives.

I like to toss salad or steamed or grilled vegetables in Mustard Vinaigrette. I also use it to marinate chicken or steak.

Mustard Vinaigrette

  • 1 cup

Ingredients

  • 1/4 cup Dijon Mustard
  • 2 tablespoons white wine vinegar
  • 3/4 cup Olive Oil
  • 1/4 teaspoon Salt
  • freshly ground black pepper to taste

Equipment

  • small jar with cover

Directions

  1. Mix mustard and vinegar together in jar. Add salt and olive oil. Shake vigorously. Taste. Add black pepper, and herbs if desired.
