Heirloom Tomatoes and Bleu Cheese are a magical combination. I wait all year for those indescribably delicious heirloom tomatoes. Yes, in this era of perpetual availability of all fruits and vegetables, there still is a special unique flavor to produce in its natural season. Tomatoes fall into this category. To me, there is nothing more delicious and satisfying than a perfectly ripe tomato. And, being a devotée of what’s often referred to as “stinky” cheese; the combination of Heirloom Tomatoes and Bleu Cheese is a favorite of mine.

My Mother used to eat tomatoes like people eat apples. In fact, tomatoes are a fruit! So whether you think of tomatoes as vegetables or fruit and cheese; you will love it!

My favorites are Jersey and heirloom tomatoes. Lately, I’ve found spectacular Italian Roma tomatoes- the egg shaped ones. They are so flavorful that very little needs to be done to make them shine. In this salad, I just add a little bleu cheese, olive oil, and sea salt and voila- magic happens.

Heirloom Tomatoes and Bleu Cheese Salad

Ingredients

  • 3 medium heirloom tomatoes a mix of colors is pretty
  • 1/3 cup bleu cheese cut into small chunks
  • 1 teaspoon coarse sea salt
  • extra virgin olive oil

Equipment

  • 1 serrated knife

Directions

  1. Slice tomatoes about 1/4 inch thick. Arrange slices in an overlapping pattern on the plate. Alternate colors if you have bought different color tomatoes. Sprinkle sea salt and bleu cheese over the tomatoes. Drizzle olive oil over the top. Serve at room temperature with crusty bread. There is no better lunch or appetizer to be had!
